Perfect Summer Cupcakes: Strawberry with Basil Buttercream

I'll be honest, I'm a tough sell when it comes to cupcakes. They're cute as can be, but they almost never compare -- in my mind -- to a nice, moist slice of cake.

But, cupcakes do offer the advantage of being a nice way to provide single servings of dessert for backyard barbeques and gatherings, without the hassle of cutting and serving. So, I'm aways on the lookout for ways to work them into my repertoire.

Lately, I've been obsessed with the idea of pairing up summer herbs with fruit. They have such an affinity for one another, and I'm often amazed that more recipes don't utilize the wonderful grassy, earthy qualities of herbs to enhance their baked goods.

So, I started off by playing around with cupcakes.

These beauties were the result of an experiment combining strawberries and basil. And -- dare I say -- I may have found a cupcake that I'll make time and time again.

The buttery vanilla and fresh strawberry batter is moist and fruity. It doesn't rise sky-high due to the moisture content of the fruit, but I also didn't have the typical issue of the cupcakes sinking in the middle as some fruit-filled cakes tend to do.

Even better, the rich, fluffy basil buttercream frosting provides a perfect light, sweet summery flavor. It's easy to work with for piping and spreading. And I really love the look of the gorgeous green flecks of basil.

Despite my cupcake nay-saying, I might be in love.

Buttery Lemon Thyme Biscuits

Is there anything more delicious than a homemade biscuit?

 Not according to Paul, whose eyes glaze over whenever I announce that we’ll be having a weekend breakfast of biscuits and gravy. And who blames him? After all, biscuits have been a staple at the family table for centuries – and for very good reason.

Been working on a lot of biscuits in the kitchen lately to develop the perfect recipe for the Go Bold With Butter blog we've been writing for.  

In the process, we developed a simple, modified technique that won’t require you to roll out the dough or haul out your biscuit cutters. They’re chock-full of flavor, thanks to the addition of lemon zest and a bit of fresh thyme.

And they’re just about foolproof -- buttermilk, along with real butter, in the dough creates a tender flaky biscuit that won’t disappoint.

These lemon and thyme-infused treats are delicious with a bit of lemon marmalade, as shown int he picture.  But, they also make a great dinner biscuit... I'm envisioning these being perfect next to a delicious slice of roasted chicken with garlicky green beans on the side.

Plus, they freeze well, so don’t be afraid to make the entire batch even if you can’t eat them all in one sitting!
Just writing about these makes me wish it was the weekend again... such a great breakfast.

Roasted Red Potato Salad with Deep Woods Dressing

Pin It It’s that time of the year again. Time for backyard brats and beach parties and starchy salads consumed al fresco.

 It’s also time to enjoy the delicious bounty of summer herbs that are readily available – hopefully as close as in your back yard.

Despite this year's hot dry weather, we've been religiously watering and gently pruning our basil plants to keep them in the best possible shape.

The sweat equity is well worth it when we get the hankering for a delicious BLT with garlic basil mayo, a bit of pesto for our pasta, or great picnic food like this deliciously easy potato salad.

This vinegar based salad starts with tender, new red potatoes roasted in butter until crisp and brown and then tossed with a fresh balsamic vinegar and basil vinaigrette while they’re warm.

After absorbing all of that deliciously sweet balsamic flavor, they’re dressed with plenty of freshly chopped basil. Serve this classic summer salad with crispy-skinned brats and an ice cold glass of beer.

Grilled Vegetable Heaven... on a Sandwich

When we get back from the farmer's market at this time of the year, I can't resist making one of my favorite summer treats -- grilled vegetable sandwiches.

First, I take a pile of vegetables and chop them into sandwich-sized pieces. This week, we happened to have some locally grown hydroponic orange peppers, a few baby eggplants from the farmer's market, some yellow summer squash, and a few little sweet onions from our CSA.
After some quality time on the grill, those vibrantly lovely veggies were reduced to a fantastically delicious shadow of their former selves. I'll admit to slurping up a few of the slices of caramelized eggplant before they ever made it CLOSE to the sandwiches.
Before I get too far ahead of myself I'd better tell you that, just before we grilled up those veggies, I mixed up the real key to a good summer veggie sandwich. Garlic basil mayonnaise.
No, I didn't go through the trouble of making my own (though that's NEVER a bad idea). But, in this particular case, even the cheater's approach is nothing short of glorious. A bit of garlic and some chopped basil transforms ordinary jarred mayonnaise into something truly extraordinary. And trust me, you ain't lived until you've taken a whiff of this delicious mess!!
Slather some of that extraordinary mayo on one side of a loaf of asiago pesto foccaccia from the local bakery... and pile the veggies high! Grab a side of grilled corn on the cob, and I'm pretty sure you'll be good and satisfied.

Oh, yum!
This is local eating at its finest! And no recipes necessary.
