Thai Style Coconut Shrimp Tacos

Tacos make great weeknight meals because they’re quick to pull together. And, if we've learned anything over the years it's that -- as weird as it may sound -- almost anything tastes good wrapped up in a tortilla. 

We've pulled off some pretty interesting tacos and wraps in our time, a number of which were edible, but definitely not fit for blogging.

But here's one we made more recently that is entirely worth the minimal effort.

We took inspiration from the fish tacos we make at least once every couple of weeks. But, this time we added shrimp. And we dredged the shrimp in coconut. 

And then --  instead of topping them with chipotle slaw -- we subbed out the chipotle for Thai red curry and made it Thai style. 

Along the way, we came up with a great way to batter and bake shrimp. 

Turns out dipping the shrimp in a spicy butter mixture and dredging them in coconut before baking ensures rich flavor and a crispy coating that’s almost as good as fried.  Huh, who would've known?

Well, now we do. And this one is a keeper.

Weeknight Shortcuts: Thai Chicken Pizza

It's difficult to believe that it's been a whole week already since our last post. But, that just goes to show how busy we've been with the planning for the Cookies for Kids' Cancer Bake Sale & Silent Auction here in Milwaukee.  We've met an amazing array of people over the past couple of weeks, whose generosity has been absolutely astounding.

Unfortunately, it also means we haven't been creating a whole lot of original recipes in the Burp! kitchen.  Fortunately, we have a few delicious "secret weapons" under our belt that assist in making sure we're still happy and well fed, even when times get crazy.

One of our favorite quick weeknight meals happens to be this delicious veggie laden Thai chicken pizza, which is a breeze to throw together even when time is tight.  It does make use of a few convenience items, which we don't normally rely upon.  But, its nutritional profile still remains quite solid, which makes it a nice stand-by for nights when we might otherwise order take-out.

One of the items I try to keep on hand are premade corn pizza crusts (we love these rustic crusts from Vicolo, made with non-GMO corn).  These make a great base for a variety of pizzas, and they're absolutely delicious.

In addition to the crusts, a great Thai pizza needs only a few additional ingredients to be absolutely stellar -- some leftover chicken, a few vegetables, cilantro, and some delicious Thai style peanut sauce.

If you've never made peanut sauce before, you'll be delighted by how easy it is to put together. We use a no-cook sauce made with peanut butter and coconut milk. But, you can also use a premade sauce (Trader Joe's satay sauce is quite good) for this application. The peanut sauce recipe will make more than needed for pizza, but you'll have no trouble using up the leftovers. Just throw a bit in with pasta and some shredded vegetables for homemade peanut noodles.  Or use it as a dipping sauce for vegetables or chicken.
Just top pizza with the peanut sauce, add vegetables, cooked chicken, chopped cilantro, and shredded mozzarella cheese.  Bake at 450 degrees for 15-20 minutes or until cheese is melted and beginning to brown.
I don't know if I should admit it, but I feel a little bit like Rachael Ray whenever I make these pizzas... But, the reality is, it's pretty darned good for a meal you can put on the table in less than 30 minutes.

Quick & Easy: Squash Soup with a Red Curry Kick

Now that spring has sprung, I'm enrapt in the adventure of cleaning out my winter veggie freezer stores. In addition to clearing space to make way for the upcoming summer bounty, using what's on hand means I'm able to save quite a bit of money on groceries.

This past week, when Peef poked his head down into our chest freezer, he found a package of winter squash puree that we'd forgotten about. I'd saved it up to make a batch of that beer-cheese-squash soup, but we didn't have any nice sharp cheddar cheese on hand. So, I decided to improvise.

A glance into the pantry revealed that I had ... not one, not two... but THREE little jars of Thai Kitchen red curry paste on hand. Apparently the paste was on sale at some point this winter, and my hoarding impulses took over for a moment. Needless to say, it seemed like a good move to amend my soup-making plans in that direction.

I sauteed an onion in a bit of coconut oil, and added a couple of teaspoons of the paste to the mix.
Then I added my squash puree, and stirred everything up thoroughly.
I added a can of low-fat coconut milk, and continued to stir until the soup was fragrant and creamy.
Then, I added 2/3 cup or so of diced red pepper -- for color and a bit of crunch. I let the soup simmer for 15-20 minutes, until the flavors melded. And then I poured it into bowls.
A bit of cilantro on top, and everything looked delicious.
This soup was definitely a delicious change of pace. The complexity of the red curry was a nice match for the uber-sweet squash, and the coconut milk gave the soup a lovely tropical edge without making it too rich. I have to admit I made it a BIT too spicy, even for our taste... but a less heavy hand on the curry paste would solve that in a jif.

This soup was the height of simple, weeknight cooking. Not altogether recipe-worthy, since it was so easy -- but delicious enough to warrant a repeat performance. This would be a fantastic soup to serve as a starter for a more intricate Thai feast... might have to start planning one of those for next winter.
