I once made a chicken mole verde using a recipe of my own invention that I cobbled together from a few different versions. After all that work, my husband was totally unappreciative, so I never made mole again. Such a pity.<br /><br />I really like seeing people make their own sauce for enchiladas because all too often I see what looks like a good enchilada recipe and then I see, "1 Can Enchilada Sauce" on the recipe list.
